80% Savagnin, 20% Chardonnay
This traditionally made white from the Jura is a blend of 80 per cent Savagnin with 20 per cent Chardonnay, aged in a cask with some ullage. Anyone who has ever tasted a Jura Vin Jaune will recognise the family of aromas which this ageing process lends to wines, especially when based on the Savagnin variety: tangy, nutty, savoury and haunting. There's plenty of fresh-apple fruit in there to enjoy as well, though. On the palate the wine is both rousingly acidic and deeply nutty -- a uniquely fresh yet satisfying combination whose gastronomic appeal has driven the enormous surge in restaurant popularity these wines have seen in recent years. Both nuts and apples linger into a long, gently fading and profoundly autumnal finish. There's a quiet sweetness behind, too. DRINK 2018-2024
